Hieatt) där författaren påstår att en tidig variant av Mawmenny(ca 1315) ska vara färgad blå! troligen med indigo( som tydligen används i flera andra recept) Detta kan nog ta bort grådaskigheten...

*Humm. ehh*. Med mina kunskaper om hur man utvinner blått ur vejde som det nog var fråga om i stället istället för indigo (indigo lär ha kommit till europa efter medeltiden). Jag har des utom känt doften från prosessen av att utvinna blått ur vejde *urk* så jag skulle inte vilja inmundiga någonting som blivit färgat med det.
Fast å andra sidan så får man ju offra sig för tidsenligheten.*urk*

Ett senare recept verkar ha ersatt vinet med buljong och färgat den med saffran istället och ett annat färgar med sandelträ, se Curye on Inglysch av Hieatt och Butler som jämför olika versioner av rätten i bokens inledning.

Rött vin har gett slutresultatet en ganska dyster lilaaktigt grådaskig ton. Hur pass mörk beror lite på hur det röda vinet ser ut (om det är åt det blåvioletta eller det tegelröda hållet) men grådaskigheten har alltid funnits där. Med vitt vin har resultatet blivit mycket mer tilltalande för ögonen.

Detta leder mig nu till frågan:
Finns det några uppgifter på fördelningen mellan produktionen av rött och vitt vin under 1200-1500 ? Skiljde man ens på rött och vitt vin ?
